Dillinger's Minestrone

Directions

  1. Add olive oil, carrots, onion, and celery to a 6-qt stockpot. Sauté until the onion is translucent, about 10 minutes.
  2. Add the garlic, Sauté for another 2 min.
  3. Add the pre-soaked drained beans, crushed tomatoes, tomato paste, bay leaves, and cover with water (about 8-9 cups or so).
  4. Bring to a boil, reduce heat, and simmer for 1 to 1.5 hours.
  5. Add the zucchini, salt and pepper to taste, and simmer for 30 minutes.
  6. Add the Ditalini pasta 10 minutes before serving (or the time it takes the pasta to cook according to the box).
  7. Meanwhile, while the pasta is cooking, for the Basil oil, blend the 1/2 cup olive oil and basil using an immersion blender.
  8. To serve, drizzle the basil oil over each serving of soup.
